Eden Quintessence is an original sweet white wine made from ice. A selection of Semillion, Sauvignon Blanc and Riesling, was frozen by a unique technique specially developped by our wine maker.
Eden Quintessence is an original sweet white wine made from ice. A selection of Semillon, Sauvignon Blanc and Riesling, was frozen by a unique technique specially developed by our winemaker. Once the grapes are frozen, they will be pressed. The water- actually bits of ice-is what’s extracted. The intense flavour comes from the highly sweet concentrated must, rich with acid, which did not freeze. The juice was fermented in tanks for 2 months and then aged in French oak barrels for 36 months.
Judges' comments
This nine-year-old wine is showing lovely creamy pineapple, caramel, rose, roasted chestnuts and butterscotch notes. The use of oak is well played into the overall package as there is enough power in the wine to support depth of flavour. Balanced, intense and delicious
