Know for its berry-red character, this special reserve wine’s core of Monitor Ledge Cabernet Sauvignon is blended with Merlot to add texture and velvety roundness, and Shiraz with a small amount of Petit Verdot to enhance color and intensity.
This Special Reserve wine has been handcrafted in our cellars, located on the Judean Mountains in the Holy Land, at an elevation, 950 metres overlooking the ancient Biblical city of Hevron. Hevron is the burial place of Abraham, Isaac, Jacob, Sarah, Rebecca and Leah, Patriarchs and Matriarchs of the Jewish People. Vinified with the traditional winemaking techniques of warm fermentation in small open vats, aged in barrels for 24 months, this rare wine displays the rich varietal flavours of carefully hand-selected Cabernet Sauvignon, Merlot and Shiraz delicately balanced by the savoury finish of French Oak Barrels. It carries out concentrated ripe black plums and blackcurrant aroma. Once you open it, amazing enchanting floral violet fragrance fills up in the whole room. The entrance tastes like coffee and smoked chestnuts, just this “particular smoky smell”. The ending note is manifested by cinnamon and cardamom type of minor acrid stimulation, couples with butter, creamy like of extra taste. Fantastically, it indeed is described as an “aristocrat” for its rich multi-layer and excellent transformation. I use such metaphor to place emphasis on its long-lasting enjoyment in which its tannins are quite strong. It is therefore suggested to breathe it for 8-hours before drinking.
