For this rich Cabernet Sauvignon, fermentation takes place in small, open top fermenting tanks, with the cap punched-down every six hours to ensure a gentle, yet efficient extraction of color and tannins.
The grapes for this barrel aged- 20 months- Cabernet Sauvignon mature at a leisurely pace while basking in the warm sun of the Judean Mountains and being gently caressed by the cool maritime breezes from Israel’s mediterranean coastal plain.
